- 4 garlic cloves
- 2 lemons

Preheat the oven to 250°C (approximately 475°F).

Rinse fish inside and out and pat dry. Peel garlic and cut into thin slices. Rinse lemons and cut into slices. Place lemon slices and garlic into fish bellies and season with salt and pepper. Mix sea salt with egg whites in a bowl. Line a baking sheet with parchment paper and Add half of sea salt mixture on it split into quarters. Place fish on salt mixture and cover with remaining salt mixture. Bake in preheated oven for about 25 minutes. Then serve with salt crust.
