4 slices Smoked pork chop
vegetable oil
800 grams raw Sauerkraut
7 Juniper berries
350 milliliters white wine
3 bay leaves
2 onions
1 ½ Tbsps clarified butter
salt
freshly ground peppers
600 grams waxy potatoes
4 Mettwurst

Preparation steps

1.

Peel onions and cut into small pieces. Heat ghee in a pan and saute onions until soft. Add sauerkraut, juniper berries and bay leaves and saute briefly. Add wine and bring to a boil. Reduce heat nad simmer, covered, for about 30-40 minutes. Season with salt and pepper.

Scrub potatoes and cook in salted water until tender. Drain and peel, then cut into wedges.

3.

Add smoked pork and sausages to the pan and cook for about 10 minutes on low heat.

4.

Arrange pork with sausages, sauerkraut and potato wedges on pltes and garnish with bay leaves. Serve with cold beer, if desired.
