- 1 onion
- 2 garlic cloves
- 1 stalk Leeks
- 400 grams Italian sausage (alternatively coarse Bratwurst)
- 2 Tbsps olive oil
- 150 milliliters dry white wine
- 800 milliliters Beef broth
- 400 grams Broad bean (loose)
- 1 Tbsp finely chopped parsley
- salt
- freshly ground peppers
Preparation steps
1.
Peel and finely chop the onion and garlic. Rinse and trim the leek and cut into rings.
Loosen the sausage meat from the skin and brown until crumbly in some oil. Add the onion, garlic and leek and fry for 3-4 minutes. Deglaze with the wine and pour in the broth. Simmer for about 15 minutes. In the last 5 minutes, add the beans and the parsley and season with salt and pepper.
Serve immediately.
