For the dough
250 grams (approximately 9 ounces) Pastry flour
20 grams (approximately 3/4 ounce) fresh yeast Yeast
l lukewarm water
4 Tbsps olive oil
salt
3 Tbsps mixed chopped Fresh herbs (z. B. parsley, oregano, thyme, rosemary, fennel)
For the topping
200 grams (approximately 7 ounces) canned Tomatoes
2 Tbsps olive oil
salt
freshly ground peppers
150 grams (approximately 5 1/3 ounces) Feta (or buffalo mozzarella)
150 grams (approximately 5 1/3 ounces) Chorizo
1 onion
4 Oyster mushrooms (or shiitake)
1 tsp fresh thyme

Preparation steps

For the dough: place the flour in a bowl and make a well in the center. Crumble the yeast in some water and pour into the well, and mix with the flour until combined. Cover and let stand 15 minutes. Combine the remaining water with the salt and oil and place in a food processor along with the flour mixture. Process into a smooth dough, add the herbs and process briefly to combine. Cover and let rest 1 hour in a warm place.

For the topping: Drain the tomatoes, reserving juice and coarsely chop. Heat the oil in small pot and add the tomatoes, and their juice and bring to a boil. Season with thyme, salt and pepper. Cut feta or mozzarella into pieces, thinly slice the chorizo. Clean mushrooms and cut into wide strips. Peel the onion, and halve or quarter depending on its size.

Preheat the oven to 250°C (approximately 480°F). Oil a pizza pan.  Punch the dough down and roll on a lightly floured work surface, from the center to the edge, leaving a thick edge. Transfer to a baking sheet. Spread the tomato sauce over the dough. Top with slices of sausage, onions, mushrooms and cheese and drizzle with a little oil. Bake until the dough around the edge is lightly browned, about 12 minutes . Serve with fresh thyme sprinkled over the top.
