- 300 grams Bologna sausage (Lyon-Style)
- 1 large white onion
- 3 Pickled cucumbers
- 1 Tbsp scallions
- For the marinade
- 2 Tbsps Wine vinegar
- 1 Tbsp Mustard
- 1 Tbsp Horseradish
- 3 Tbsps vegetable oil
- 1 pinch sugar
- 2 Tbsps Cucumber water
- salt
- freshly ground peppers
Preparation steps

Remove skin from sausage and cut into thin slices.

Peel onion and cut into thin rings.
3.
Cut cucumbers into thin strips.
4.
Whisk vinegar with mustard, horseradish, sugar, and pickle juice. Season with salt and pepper. Whisk in oil until emulsified. Toss sausage slices, onions, and cucumbers with dressing.
5.
Serve salad sprinkled with chives. Serve with whole-grain bread and butter, if desired.
