1 Red onion
4 scallions
400 grams button Mushroom
½ handful thyme
½ handful oregano
3 Tbsps olive oil
1 pinch sugar
Sea salt

Preparation steps

Drain the olives and cut into rings. Peel the onion and cut into rings. Rinse the scallions, trim and cut diagonally into 5 cm (approximately 2 inches) long pieces. Wipe the mushrooms with a damp cloth and cut in half or quarters, depending on the size. Rinse the thyme and oregano and shake dry.

Heat the oil in a large frying pan, sauté 2/3 of the onion rings over high heat for 1-2 minutes. Sprinkle with sugar and let caramelize slightly. Reduce the heat, add the mushrooms and sauté for 2-3 minutes. Add the herbs and scallions and cook for 2-3 minutes. Add the remaining onion rings and olives and toss to combine. Season with salt and pepper and serve immediately.
