175 cooked ham
150 grams green Olives (pitted)
5 eggs
50 milliliters cold-pressed olive oil
100 grams Quark
1 tsp salt
1 generous pinch ground saffron
300 grams Pastry flour
1 packet Baking powder
½ tsp dried thyme
butter (for the pan)

Preparation steps

Cut ham into small strips. Slice olives into halves or thirds, if needed. Whisk eggs, oil, quark and saffron together and season with salt. In a separate bowl, mix flour, baking powder and thyme. Mix flour mixture, ham and olives together and stir into egg mixture to form a sticky dough.

Spread batter into greased pan until smooth. Bake in preheated oven on center rack at 200°C (approximately 400°F) for about 20 minutes.  Reduce oven temperature to 180°C (approximately 350°F) and bake for about 50 minutes.

Let loaf cool in pan for 5 minutes and remove from pan and let cool completely on a wire rack. To serve, cut into slices.
