350 grams Pastry flour
2 tsps Baking powder

250 grams grated Emmentaler cheese
100 grams Blue cheese (diced)
2 eggs
100 milliliters Buttermilk
80 milliliters vegetable oil

Preparation steps

Preheat the oven to 200°C (approximately 400°F). Place paper liners into the wells of the muffin tin.

Rinse scallion, trim and cut into thin rings. Rinse, trim and chop the bell pepper. Coarsely chop pecans. Mix flour with the baking powder, salt, a pinch of cayenne pepper and paprika. Stir in Emmentaler and the blue cheese. Beat the eggs with the buttermilk and oil and stir into the flour mixture. Fold in scallion and diced bell pepper. Pour into the muffin wells and sprinkle with chopped pecans. Bake in the oven about 25 minutes.

Remove from oven, allow to cool briefly and remove from the muffin tin. Serve warm or at room temperature.
