- For the topping
- 1 Tbsp butter
- 1 bunch scallions (halved lengthways and chopped)
- 2 cups Prawn (ready-to-cook)
- ⅞ cup cream (at least 30% fat)
- 1 cup Sour cream
- 1 Tbsp Corn starch
- 4 eggs
- Lettuce (to garnish)
Preparation steps

Pile the flour on the work surface and stir in a pinch of salt. Create a well in the middle and place the butter around the well. Crack the egg into the well and start to rub together all the ingredients until they resemble breadcrumbs. Quickly knead into a ball, wrap in cling film and chill for 30 minutes.

Heat the oven to 180°C (160°C in a fan oven), 350°F, gas 4 and grease a tart tin.

Roll out the pastry between two sheets of cling film and place into the prepared tart tin creating an edge all the way round.

To make the topping heat butter in a pan and fry the spring onions. Add the prawns, season with salt and ground black pepper and place on top of the pastry.

Mix together the cream, sour cream, cornflour and the eggs, season with salt and ground black pepper and pour over the top of the tart. Bake for 40-50 minutes until golden brown. If the tart browns too quickly, cover with aluminium foil. Serve in slices garnished with lettuce.
