- 18 ozs Puff pastry
- 1 egg (beaten)
- 1 ⅔ cups soft Goat cheese (crumbled)
- 3 cups Tomatoes (sliced)
- freshly ground Black pepper
- 1 tsp thyme
- 2 tsps oregano
- 1 Tbsp olive oil
- To garnish
- caperberry

Preparation steps

Heat the oven to 200°C (180° fan) 400°F gas 6. Lightly grease a 35cm x 22cm|14 x 9 baking tin.

Roll out the pastry on a lightly floured surface and line the tin. Brush the base with beaten egg and prick the base all over with a fork. Bake for 12 minutes and remove from the oven. Press the pastry base down with your fingers.

Scatter the cheese over the base and arrange the tomatoes on top. Sprinkle with salt, pepper, thyme and oregano.

Drizzle with the oil and bake for 20-25 minutes until the cheese has melted and the tomatoes are tender.
5.
Garnish with caper berries.
