¼ cup soft butter
3 eggs (separated)
1.333 cups goat cream cheese
¾ cup Goat cheese (grated)
¼ cup cream
2 Tbsps all-purpose flour
Nutmeg (grated)
For the dressing
1 tsp powdered sugar
1.333 cups cherry Tomatoes (quartered)
4 Tbsps balsamic vinegar
4 Tbsps olive oil

Preparation steps

1.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and line four small baking dishes (approx. 250 ml) and a baking tray with greaseproof paper.
2.
Mix the butter and the egg yolks until creamy. Stir in the goat's cheese and then add the grated cheese and the cream. Mix well.
3.
Beat the egg whites until stiff and fold into the cheese mixture along with the flour. Season with a pinch of salt and nutmeg.
4.
Transfer the mixture to the baking dishes and bake for around 15 minutes until golden brown. Carefully knock out onto the prepared baking tray and return to the oven. Bake for another 5 minutes.
5.
Caramelise the icing sugar in a hot, non-stick pan. Swirl in the tomatoes, transfer to a bowl and leave to cool.
6.
Add the vinegar and oil to the tomatoes and season with salt and ground black pepper.
7.
Arrange the souffles on plate and drizzle with the tomato dressing. Serve garnished with rocket and thyme.
