4 Sea bass (each 300 grams)
salt
freshly ground peppers
4 stems parsley
olive oil
For gremolata
2 garlic cloves
2 Tbsps freshly chopped parsley
2 lemons (zest)
2 Tbsps Pine nuts (toasted)
1 Tbsp Caper
4 Tbsps olive oil
Lemon wedge (for garnish)

Preparation steps

1.

Rinse sea bass, pat dry and season inside and out with salt and pepper. Fill with the parsley stems and cook slowly in hot oil in a pan for 6-8 minutes until golden brown on each side, turning periodically.

For the gremolata, peel the garlic and chop finely. Combine with parsley, lemon zest, pine nuts, capers and oil.

3.

Place the fish on plates, top with gremolata and serve garnished with lemon wedges.
