2 Tbsps white Sesame seeds (hulled)
½ head Savoy cabbage
1 Red Bell pepper
2 Red onions
sesame oil (for cooking)
salt
freshly ground peppers
For the pork
18 ozs Pork tenderloin
salt
freshly ground peppers
1 Tbsp Mustard
clarified butter (for cooking)
1 Tbsp sherry
1 Tbsp Ketchup
Worcestershire sauce (to taste)
2 Tbsps Whipped cream
4 Tbsps Beef broth (to taste)

Preparation steps

Toast the sesame seeds in a dry pan, then set aside.

Bring a pot of water to a boil, and prepare a cold water bath. Julienne the cabbage, blanch it until al dente, then add to the cold water bath and drain well. Trim and julienne pepper. Peel and thinly slice the onions into half rings.

For the pork, melt a little butter in a pan. Remove the skin from the pork, brush lightly with the mustard, then brown in the pan. Reduce the heat, cover, and cook until it has reached your desired doneness. Remove from the heat and keep warm. Deglaze the pan with the sherry, then add the ketchup, worcestershire, heavy cream, and beef broth. Bring to a boil, then reduce until thickened.

Heat the sesame oil in a pan, and sauté the onions and peppers for 5 minutes. Add the cabbage, mix well, and sauté until the vegetables are done.

To serve, slices the pork, and transfer to plates. Add the vegetables, spoon the sauce over the top, and sprinkle with the sesame seeds.
