- ½ cup butter
- 4 eggs
- 1 ¾ cups sugar
- 1 Vanilla bean (seeds)
- 2 tsps grated Orange zest
- 2 ½ cups Semolina
- 2 tsps Baking powder
- 18 ozs thick, plain Yogurt
- ¼ cup Almond flour
- 1.333 cups water
- 1 tsp lemon juice
- 1 cup chopped Pistachio
Preparation steps
1.
Heat the oven to180 ° C (160°fan) 350°F gas 4. Butter a 25cm| 10" square baking tin.

Beat the butter in a mixing bowl until soft. Beat in the eggs, 100g |1/2 cup sugar, vanilla seeds and orange zest.

Stir in the semolina and baking powder until blended.

Mix the yoghurt with the almonds and stir into the mixture until well combined.
5.
Put into the tin and bake for 40-45 minutes until pale golden. Cool. in the tin.

Heat the water, lemon juice and remaining sugar in a pan until the sugar has dissolved. Increase the heat and bring to a boil. Simmer gently for a few minutes, then remove from the heat and cool slightly.
7.
Drizzle the syrup over the cake and cool completely in the tin. Sprinkle with chopped pistachios and serve cut into pieces.
