7 sheets gelatin
1 ⅛ cups Mascarpone
1.333 cups Yogurt
5 Tbsps sugar
¼ cup cream
For the stewed elderberries
1.333 cups Elderberry
0.333 cup Red wine
0.333 cup granulated sugar
½ tsp Corn starch
cup Red wine
2 tsps Vanilla sugar
cinnamon (to taste)
mint (to garnish)

Preparation steps

Soak the gelatine in plenty of cold water. Mix the mascarpone smoothly with the yoghurt and stir in the sugar. Heat 2 tbsp cream, squeeze out the gelatine and dissolve in the hot, but not boiling cream. Stir the rest of the cream into the gelatine and quickly stir into the mascarpone mixture. Divide the mixture between 4 moulds and chill for at least 3 hours.

Put the elderberries into a pan with 75 ml red wine and the granulated sugar and bring to the boil. Cover and simmer over a low heat for 10–15 minutes. Mix the cornflour with 30 ml red wine and stir into the elderberries. Heat until the juice thickens. Add vanilla sugar and cinnamon to taste, remove from the heat and leave to cool. Turn the mascarpone cream out on to 4 plates and serve with the stewed elderberries and a garnish of mint.
