Lamb is rich in protein, as well as as a slew of vitamins and minerals including vitamin B12, iron and zinc.
These lamb chops pair beautifully with lightly grilled summer vegetables.

- 12 lamb chops
- For the herb sauce
- 8 Tbsps olive oil
- 3 tsps fresh thyme (chopped)
- 3 tsps fresh rosemary (chopped)
- 2 Tbsps fresh parsley (chopped)
- 3 cloves garlic cloves (finely chopped)
- For the cheese muffins (Makes 12 muffins, 2-3
- 1 ⅔ cups flour
- 3 tsps Baking powder
- 1 cup cheddar Cheese (finely chopped)
- 1 Tbsp parsley (finely chopped)
- 1 pinch salt
- 1 egg
- 1 cup Buttermilk
- 2 Tbsps vegetable oil
- butter (or 24 paper liners)

1 Skillet, 1 Small bowl, 1 Measuring cups, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Tablespoon, 1 Wooden spoon, 1 Slotted spatula, 1 Meat mallet, 1 Plastic wrap
Preparation steps

Heat the oven to 400°F, and grease a muffin tin. Alternatively line it with paper liners using two liners per muffin.

To make the herb sauce, place all the ingredients in a blender and puree until smooth.

Brush the chops with the herb sauce and grill for about 3 minutes on each side.

To make the muffins mix the flour with the baking powder, cheese, parsley and salt. Whisk together the egg and the buttermilk, then pour into the flour mixture along with the oil. Mix until all dry ingredients are moist.
5.
Fill the muffin tin with the mixture so that each muffin is 2/3 full. Bake for about 20 minutes. Remove from the oven and allow to cool for about 5 minutes before turning out.
