- 400 grams Fruit (rinsed, if necessary, peeled, pitted and chopped)
- 100 grams sugar
- 1 Lime (juiced and zested)
- 1 egg white
- Plastic Containers for popsicles (reusable) or high narrow cup
- Wooden stick
Preparation steps

Puree fruit in a blender and strain through a sieve.

Bring sugar to a boil with 4 tablespoons water until syrupy, then allow to cool and mix with the fruit puree, lime juice and lime zest. Beat egg white until stiff and fold uniformly with the fruit mixture. Place fruit pulp in a flat metal mold in the freezer and stir occasionally (so that large crystals cannot form).

When the mixture is half frozen, transfer to the popsicle molds, insert wood handles and freeze for 2-3 hours.
