- 400 grams Fruit (of choice)
- 100 grams sugar
- 1 Lime (juiced and zested)
- 1 fresh egg white
- Plastic Containers
- Wooden stick
- High narrow Cup
Preparation steps

Puree fruit in a blender and strain through a sieve.

Bring sugar to a boil with 4 tablespoons water until syrupy, then allow to cool and mix with the puree, lime juice and lime zest. Beat the egg white until stiff and uniformly fold into the fruit puree. Pour fruit pulp into a flat metal mold and freeze in the freezer, occasionally stirring (so that no large crystals form).

When the mixture is half frozen, transfer it to the popsicle molds or high, narrow cups, insert wood handles and freeze for 2-3 hours.
