- 1 Tbsp lemon juice
- 1 Pineapple
- 1 Star fruit
- 12 cooked Cocktail shrimp
- 3 green chili peppers
- 250 milliliters Orange juice
- 2 Tbsps Fruit Vinegar
- Tabasco sauce
- salt
- freshly ground peppers
- sugar
- 12 long Wooden skewers
Preparation steps
1.
Rinse pear, pat dry, quarter and remove the core. Cut pear into 12 wedges. Place on a plate and sprinkle with lemon juice.

With a sharp knife, remove rind from pineapple, then cut into quarters lengthwise, remove core and cut each quarter crosswise into 3 pieces. Rinse star fruit and cut crosswise into 12 slices.

Thread 1 piece each pineapple, pear, carambola and shrimp onto each skewer and place on a large platter.
4.
Halve chiles lengthwise, remove seeds and ribs, rinse and cut crosswise into thin strips. In a bowl, mix orange juice with vinegar, a few splashes of Tabasco and chiles. Season with salt, pepper and 1/2 teaspoon sugar. Drizzle marinade over skewers, cover and marinate about 1 hour before serving.
