- 1 ripe Avocado
- 1 ripe Tomato (finely chopped)
- 1 tsp lemon juice
- 1 Tbsp cilantro (finely chopped and divided)
- salt (to taste)
- freshly ground Black pepper (to taste)
- Baguette (sliced and toasted)
- 20 large shrimp (peeled; cleaned and cooked)
Preparation steps

Gently mash avocado, add tomato, lemon juice and half of the chopped cilantro. Season with salt and pepper. Spread on top of toasted baguette slices, top with shrimp and sprinkle lightly with remaining cilantro.
