18 small shrimp (poached)
2 spears raw Asparagus (finely sliced, horizontally)
¼ cup red Bell pepper (finely sliced)
2 Tbsps fresh Chives (chopped)
1 shallot (minced)
3 Tbsps olive oil
1 Tbsp Lime juice
kosher salt (to taste)
freshly ground Black pepper (to taste)
½ cup Arugula
6 pcs rustic Bread (grilled or toasted)

Preparation steps

1.
In a medium bowl, combine shrimp, asparagus, red pepper, chives and shallot. Drizzle with olive oil and lemon juice and toss well. Season with salt and pepper.

Place a few arugula leaves onto each pieces of bread. Top with a portion of the shrimp and asparagus mixture. Serve.
