On a floured surface, knead dough and divide. With a rolling pin, roll out each half of dough into a circle and place on pizza pan and brush with 2 tablespoons olive oil and lightly season with salt and pepper. Drain mozzarella and cut into slices and spread evenly over dough. Peel onion and cut into thin slices. Rinse peppers, drain and wipe dry and remove seeds and ribs and cut into thin strips. Evenly arrange onion, pepper strips and thawed shrimp over pizzas. Season with salt and pepper and sprinkle with chives. Bake in preheated oven for 10-15 minutes. Serve immediately.
