200 grams shrimp (in brine)
200 grams mild Sliced cheese (such as gouda)
3 scallions
2 Tbsps Yogurt (0.1% fat) (organic)
1 tsp vegetable oil
1 Tbsp White vinegar
ground paprika (spicy)
salt
sugar
Red pepper flakes (as desired)e
250 grams Filo dough
50 grams softned butter

Preparation steps

1.

Drain shrimp. Cut cheese into small cubes. Rinse and slice scallions.

2.

Combine yogurt, oil and vinegar. Season with paprika, salt, sugar and pepper flakes. Stir in shrimp, cheese and spring onions.

3.

Preheat the oven to 200°C (approximately 400°F).  

Carefully pull apart phyllo dough and brush with butter. Place on greased baking sheets and bake for about 5 minutes, until golden brown.

Remove, put 3-4 dough sheets together, add a bit of shrimp mixture and roll up. Let set and serve.
