- 1 Puff pastry (frozen)
- plain flour (for dusting)
- 4 Banana
- ½ lemon (juiced)
- 1 cup double cream
- 5 Tbsps honey
- 4 large eggs
- 1 pinch ground cinnamon
- 1 tsp vanilla extract
Preparation steps
1.
Thaw the puff pastry, then roll out on a lightly floured surface into a round a little bigger than a 20 cm | 8" fluted tart tin.

Line the base and sides of the tin with the pastry and prick the base several times. Roughly trim any excess overhanging pastry.

Peel and slice the bananas and sprinkle with lemon juice.
4.
Mix the cream with 3 tbsp honey, the eggs, cinnamon and vanilla extract and pour into the pastry case.
5.
Bake in an oven preheated to 180°C | 350F | gas 4 for about 30 minutes.

Take out of the oven and cover the tart filling with banana slices. Warm the honey in a microwave, brush the banana with it, and return to the oven for a further 10 minutes, or until golden-brown.
7.
Remove to a wire rack to cool before serving.
