1.
Heat the oil in a frying pan (skillet) about 26 cm/10" in diameter and fry the onions until they are browned and starting to caramelise.
2.
Heat the grill (broiler) to its highest setting. Beat the eggs in a large bowl and season with salt and pepper. Carefully mix in the sliced potato, add the fried onions and pour the mixture back into the pan.
3.
Add the sliced chorizo to the pan, cook until the eggs are nearly set then set the pan under the grill until golden brown and the eggs are cooked though.
