200 grams Pineapple
5 eggs
1 Tbsp lemon juice
100 grams Pastry flour
50 grams ground almonds (blanched)
100 grams sugar

Preparation steps

Preheat oven to 180°C (approximately 350°F). Grease bottom of ramekins with butter.

Cut pineapple flesh into small cubes. Separate eggs and beat egg whites with lemon juice until stiff. Mix flour with almonds. Mix yolks with sugar until creamy. Add flour mixture and egg whites and fold in pineapple chunks. Pour batter into ramekins and bake for 25 minutes or until golden brown. Cakes are done when toothpicks inserted in centers come out clean. Remove from oven, briefly cool, remove from ramekins and cool completely.

Serve to taste with whipped cream and caramel sauce.
