500 grams Pastry flour (and some flour on the work surface)

4 Tbsps olive oil
2 scallions
1 small red onion

150 grams cooked Chicken breasts (sliced)
100 grams fresh Cranberry
150 grams grated Mountain cheese

Preparation steps

In the bowl of an electric mixer, mix the flour with 2 teaspoons of salt and make a well in the center.  In a small bowl, crumble the yeast, sprinkle with sugar and stir in 80 ml (approximately 2 3/4 ounces) lukewarm water. Pour it into the well, stir to combine and let rise for 20 minutes. Add 2 tablespoons of oil and 100 ml (approximately 3 1/2 ounces)of lukewarm water and working with the dough hook, knead to a smooth dough, Add more water if necessary. Shape into a ball, cover and let it rise 1 hour in a warm place.

Meanwhile, rinse the scallions, shake dry and thinly slice. Peel the red onion and cut into thin rings.

After standing time, knead again, transfer to a floured work surface and forms into a long narrow roll. Cut 3 cm (approximately 1 1/4-inch) thick pieces and shape into 12 small flat thin rounds. Brush with the remaining oil and season with salt and pepper.

Preheat the oven to 250°C (approximately 475°F). Line 2 baking sheets with parchment paper. Place the flattened onto the baking sheets, spacing them a couple of inches apart. Top with the chicken, cranberries, onions, scallions and grated cheese. Bake until the crust is crisp and the cheese has melted,  10-12 minutes.
