3 cups Figs (halved or quartered)
2 Tbsps water
2 Tbsps finely grated lemon zest
2 cups sugar
2 Tbsps lemon juice

Preparation steps

1.
Put the figs, water and lemon zest into a large pan. Bring to a boil, then reduce the heat and simmer until the figs are soft.
2.
Add the sugar and lemon juice and stir over a low heat until the sugar has dissolved. Bring to a boil and boil rapidly until setting point is reached.
3.
Remove from the heat and allow to cool slightly. Stir once and spoon into hot sterilised jars. Cover, seal and label.
