Heat the oven to 200ºC (180º fan) 400ºF, gas 6.
2.
Place the flour, butter and sugar in a food processor and pulse until the mixture resembles breadcrumbs. Mix in the almonds and set aside.
3.
Roughly chop the apricots and put them in an ovenproof dish with most of their juice. Add the saffron and sprinkle in 1 teaspoon of the cinnamon.
4.
Scatter over the crumble topping, sprinkle over the remaining cinnamon and bake in the oven for 20-25 minutes.
