- 4 Dover sole (ready to cook, gutted and headed)
- Sea salt
- freshly ground peppers
- lemon juice
- Pastry flour (for dusting)
- 150 grams smoked Pancetta (diced)
- 4 Anchovy fillet
- 3 Tbsps Caper (prepared)
- 4 scallions
- 4 Tbsps butter
- 2 Tbsps Dijon mustard
- 1 lemon (cut into columns)

Rinse fish, pat dry, season with salt and pepper, sprinkle with lemon juice and flour. Cook pancetta in a dry pan until crispy. Remove and drain on paper towels.

Cook fish in pancetta drippings until golden brown on each side. Remove and tent with foil.

Mince anchovy fillets and capers. Rinse scallions, shake dry and slice.
4.
Heat butter in a pan. Add anchovies, capers, mustard, pancetta and scallions. Stir to form a sauce.
Plate fish, drizzle with anchovy sauce, garnish with lemon wedges and serve, as desired, with cucumber salad.
