- 14 ozs Rice noodles
- 2 Tbsps Oil
- 4 scallions (sliced)
- 4 baby Leeks
- 4 ozs Bok Choy (leaves torn)
- 2 sticks Celery (chopped)
- 6 Snow peas
- 4 Broccoli
- 4 Baby Corn (sliced lenghways)
- 4 Tbsps soy sauce
- 2 tsps Rice vinegar
- salt (to taste)
- peppers (to taste)
- 1 red chili pepper (seeds removed & chopped)

1 Sieve, 1 Large knife, 1 Small knife, 1 Cutting board, 1 Tablespoon, 1 Teaspoon, 1 Peeler, 1 kleiner Whisk, 1 Small bowl, 1 Toaster
Preparation steps
1.
Cook the noodles in plenty of boiling, salted water according to the packet instructions until al dente. Drain well.
2.
Heat the oil in a wok or large skillet (frying pan) and cook the vegetables over a high heat for 2-3 minutes, stirring constantly, until almost tender.
3.
Add the drained noodles and remaining ingredients and cook for 1-2 minutes, tossing all the ingredients together.
4.
Divide between 4 serving bowls and serve immediately.
