- 10 grams dried Porcini mushroom
- 400 grams Green cabbage
- 2 carrots
- 2 scallions
- 2 stalks Celery
- 1 Red Bell pepper
- 1 shallot
- 1 garlic clove
- 2 Tbsps olive oil
- 1 bay leaf
- 2 allspice
- 500 milliliters Vegetable broth
- 400 grams peeled Tomatoes (socket)
- salt
- peppers (from the mill)
- 2 Tbsps scallions
Preparation steps

Soak the mushrooms in 200 ml of warm water. Cut the cabbage into quarters and fine strips. Peel the carrot and cut into thin slices. Rinse the green onions and celery and cut into rings. Rinse the peppers, cut in half, remove seeds and cut in small dices. Peel the shallot and garlic, chop finely and glaze in a pan of hot oil. Sauté the rest of the vegetables and spices. Pour in the broth.

Add the tomatoes and simmer over medium heat for 20-25 minutes. Season with salt and pepper. Pour the mushrooms through a sieve, slice, add to the soup and simmer for another 5 minutes. Fill in preheated soup bowls and serve garnished with chopped chives.
