- ½ Cucumber
- 100 grams diced Pineapple (canned, unsweeted)
- 300 grams Smoked salmon
- 150 grams Crème fraiche
- salt
- white peppers
- 200 milliliters Whipped cream
- 1 tsp Horseradish cream (to taste, from a jar)
- 2 stems Dill
Preparation steps

Peel cucumber and halve lengthwise, scrape out seeds and slice into thin slices. Drain pineapple. Cut salmon into thin strips. Heat 2/3 of vegetable broth in a pan, add about half of cucumber slices admit and puree. Add creme fraiche and puree again for a few seconds. Add remaining broth and season with salt and pepper.

Add cream and horseradish to warm soup, pour into bowls. Top with salmon, pineapple and cucumber slices. Garnish with dill and serve.
