Spaghetti Salad

- 250 grams Spaghetti
- salt
- freshly ground peppers
- 4 Tbsps olive oil
- 200 grams carrots
- 1 onion
- 1 garlic clove
- 300 grams mixed Ground meat
- 2 Tbsps soy sauce
- 1 chili pepper
- 2 stems fresh cilantro
- For Salad Dressing
- 4 Tbsps Red wine vinegar
- 4 Tbsps lemon juice
- salt
- peppers
- 1 pinch sugar
- 5 Tbsps olive oil
Preparation steps
Break spaghetti into smaller pieces and cook in plenty of salted water until al dente. Drain, rinse with cold water and drain again. Mix with 1 tablespoon of oil.
Rinse and dry carrots, cut into thin sticks. Heat 1 tablespoon of oil in a pan and saute carrots, add 1/2 cup water, season with salt and pepper and cook until al dente.
Peel onion and garlic, chop finely. Heat oil in another pan and saute onion and garlic until translucent. Add ground meat and cook until crumbly. Season with salt and pepper, add soy sauce to taste, set aside and cool.
Halve chile pepper, remove seeds, rinse and and cut into thin strips. Rinse cilantro, shake dry and cut leaves into strips.
Combine vinegar, lemon juice and oil; season with salt, pepper and sugar.
Combine spaghetti with cooked ground meat, carrots, chile pepper and cilantro. Drizzle with dressing and serve.
