200 grams Spaghetti
150 grams shrimp (ready to cook, deveined and peeled down to tail segment)
1 Tbsp olive oil
1 bunch Arugula
1 splash white wine
½ tsp Lemon peel
100 grams Cherry tomatoes
30 grams freshly grated Parmesan
Sea salt
freshly ground peppers

Preparation steps

1.

Cook the spaghetti in plenty of boiling salted water according to package specifications until al dente.

Rinse shrimp and pat dry.

3.

Rinse arugula, shake dry and remove tough stems.

4.

Rinse tomatoes and cut into quarters.

5.

Sauté shrimp in a large pan in hot oil. Then add the white wine, tomatoes, arugula and lemon zest. Simmer 1-2 minutes. Then add drained spaghetti with little pasta cooking water to pan and season with salt and pepper. Serve sprinkled with Parmesan.
