1 shallot
1 garlic clove
2 Tbsps olive oil
salt

1 tsp sugar
200 grams Spaghetti
Basil (for garnish)

Preparation steps

1.

Blanch the tomatoes in boiling water for a few seconds. Remove the tomatoes from the water and peel. Cut into quarters, remove the core, and finely dice. Peel and finely dice the shallot and garlic. 

2.

Heat the oil in a pan, then sweat the shallots briefly. Add the tomatoes (minus 2 tablespoons), and season to taste with salt, pepper, and sugar. Simmer gently over low heat for 15 minutes. 

3.

Cook the spaghetti in boiling salted water until al dente. 

4.

Thoroughly drain the pasta, then mix with the tomato sauce and the reserved tomatoes. Garnish with the basil and serve.
