1 cup Boiled potatoes (finely chopped)
1 ⅔ cups cherry Tomatoes (halved)
cup peas (frozen)
5 eggs (lightly beaten)
3 Tbsps Parmesan (grated)
2 Tbsps finely chopped Basil
To garnish
1 Basil

Preparation steps

1.
Heat the olive oil in a large skillet. Add the potatoes, season with salt and fry for 5 minutes until becoming brown.
2.
Add the tomatoes and peas to the pan. Pour on the eggs, season with salt and ground black pepper and sprinkle over the Parmesan and basil.
3.
Cook for 5 minutes until the base is firm. Cook under a preheated grill for another 3-5 minutes until the top is firm.
4.
Tip out of the skillet and serve garnished with basil.
