400 grams potatoes
1 onion
8 Tbsps olive oil
8 eggs
8 Tbsps milk
8 Tbsps Whipped cream
salt
freshly ground peppers
2 Tbsps parsley

Preparation steps

1.

Rinse, peel and cut potatoes into 1/2 cm (approximately 1/4 inch) cubes.

2.

Peel and finely chop onion.

3.

Fry potato cubes in hot oil, stirring, about 5 minutes. Add onion and cook 5 minutes more. 

4.

Whisk eggs with milk and cream, season with salt and pepper and stir in parsley.

5.

Pour egg mixture over potatoes and cook over low heat until the underside is lightly browned.

6.

Flip tortilla onto a large lid and slide back into the pan. Cover and cook about 5 minutes more. 

7.

Slide tortilla from the pan, slice and serve as an appetizer with a glass of sherry, if desired.
