4 ½ cups waxy potatoes (peeled and cut into bite-sized pieces)
2 cups Chorizo (chopped)

Preparation steps

1.
Preheat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and line a baking tray with grease-proof paper.

Whisk together the orange juice, oil, and a little salt and cayenne pepper. Coat the potatoes with the mixture and transfer to the baking tray. Bake in the oven for around 40 minutes.
3.
Add the chorizo for the last 15-20 minutes. Remove from the oven and cool slightly. Serve warm, with a red pepper dip, for example.
