5 Tbsps olive oil
2 ½ cups fresh Calamari
1 red pepper (diced)
2 Tomatoes (cut into small chunks)
3 onions (finely chopped)
2 cloves garlic cloves (finely chopped)
2 large Cod (or firm white fish, cubed)
18 mussels (washed and de-bearded)
18 clam (washed)
2 cups short-grain Rice
6 Langoustine
6 large Prawn
1.333 cups fresh, shelled peas
1 Saffron
2 pinches cayenne pepper

1 ⅔ cups warm water

Preparation steps

1.
In a paella dish, heat the oil and add the calamari rings and peppers and cook over a gently heat for 10 minutes. Add the rice, onions and garlic, as well as the langoustines and prawns.

Stir with a spatula until the rice becomes coasted and translucent, add the tomatoes and cook for 10 minutes.
3.
Add the garden peas then season with salt and pepper. Add the cayenne pepper and saffron and gradually add in the 400ml of warm water.
4.
Add the cod chunks and bring slowly to a simmering boil, lower the heat and then cook for 20 minutes, stirring occasionally.
5.
Add the mussels and clams and cook until the shells are open. Remove any that don’t open after 5 minutes.
6.
Season with a little more salt and pepper and serve with wedges of lemon.
