Ingredients
- For the dough
- 250 grams Pastry flour
- 2 tsps Baking powder
- 175 grams sugar
- 1 Vanilla sugar
- 1 pkg Lemon extract
- 1 tsp cinnamon
- 1 pinch each of cardamom, ginger, nutmeg and Star anise
- 250 grams blanched, ground almonds
- 1 egg (and egg yolk)
- 250 grams butter
- For the filling
- 300 grams Marzipan
- 150 grams powdered sugar
- 1 egg white
Preparation steps
For the dough, pour all the ingredients except the egg, egg yolks and butter on a work surface. Make a well in the center and add the eggs and pieces of butter. Mix to make a smooth dough. Wrap in foil and refrigerate for 1 hour.
For the filling, mix all the ingredients. Roll out half of the dough and place on a greased baking sheet. Roll out the marzipan between two sheets of plastic wrap to the size of the baking sheet and place it on the sheet of dough.
Roll out the second half of the dough and place on top of the marzipan and press firmly around the edges.
Cut the almonds in half and place on the dough at even intervals. Stir the egg yolk and milk until smooth and brush the dough with the mixture.
Bake in a preheated oven at 180°C (approximately 350°F) (gas mark 2- 3) for 30-40 minutes. Allow to cool slightly, cut into 40 pieces and serve.
