- ⅔ cup butter (softened)
- 1 cup brown sugar
- 4 eggs (separated)
- 1 ¼ cups ground Hazelnuts
- ½ cup chopped Hazelnuts
- 1 tsp ground cinnamon
- 1 tsp ground cloves
- 1 tsp ground allspice
- 1 tsp Anise seed
- ¼ cup cream (48% fat)
- 5 ozs Italian Nougat (chopped)
- 1 cup all-purpose flour
- ½ cup Corn starch
- 1 tsp Baking powder
- 1 pinch salt
Preparation steps

Heat the oven to 180°C (160° fan) 350°F gas 4. Grease a 750g|1 1/2lb loaf tin.

Beat the butter and sugar in a mixing bowluntil light and fluffy. Add the egg yolks to the butter mixture gradually and stir well after each addition.

Add the nuts, spices and cream to the mixture. Mix in the nougat.
4.
Sift in the flour, cornflour and baking powder. Gently stir into the egg mixture.
5.
Whisk the egg whites and salt together until soft peaks form. Fold into the egg and flour mixture.
6.
Pour into the tin and bake for 55-60 minutes. Cool in the tin for 10 minutes, then place on a wire rack to cool completely.
