2 Tbsps olive oil
2 scallions (thinly sliced)
1 red chili pepper (finely chopped)
17 cups mussels (scrubbed)
cup white wine
4 cups fish stock
1 pinch Saffron

Preparation steps

1.
Heat the oil in a high-sided pan and fry the spring onions and chilli for 1 minute.
2.
Add the mussels and a splash of wine, then cover and steam for 5 minutes or until the mussels have all opened.
3.
Remove mussels from the pan using a skimmer and divide between six warm bowls.
4.
Pour the rest of the wine into the pan and reduce by half. Add the stock and saffron and bring to the boil. Taste and adjust the seasoning with salt and pepper, then ladle the broth over the mussels and serve.
