½ cup butter (scant)
½ cup soft brown sugar (scant)
3 Tbsps Molasses (black treacle)
½ cup milk
1 large egg
1 ¼ cups all-purpose flour
1 Tbsp ground ginger
2 tsps ground cinnamon
1 tsp baking soda

Preparation steps

1.
Heat the oven to 180C (160C fan oven) 350F, gas 4. Line a 12 hole muffin tin with paper muffin cases.

Put the butter, sugar and black treacle into a jug and microwave on medium high (850W) for 2 minutes until everything has melted together. Alternatively, heat gently together in a pan, then pour into a jug.
3.
Add the milk and stir in the egg.

Sift the flour, spices and bicarbonate of soda in a large mixing bowl. Pour in the wet ingredients and stir gently together until everything is combined.
5.
Spoon the mixture into the muffin cases and bake for 20 minutes until well risen and firm.
