5 cups Minced Beef
2 Tbsps vegetable oil
1 onion (roughly diced)
2 garlic cloves (finely chopped)
1 red chili pepper (chopped)
1 stick Celery (sliced)
1 carrot (diced)
2 red peppers (cut into strips)
1 Tbsp tomato puree
3 cups Meat stock
1 tsp ground paprika
1 ½ cups Kidney beans (tinned, drained)
1 Tbsp fresh parsley (chopped)

Preparation steps

1.
Fry the beef in hot oil until brown. Add the onion, garlic and chillies and fry for a few minutes. Stir in the remaining vegetables and the tomato puree then deglaze with the stock.
2.
Add the paprika and simmer on a low heat for 1 hour stirring occasionally. If necessary add some more stock.
3.
Add the beans in the last ten minutes of cooking time and finally add the parsley and season with salt and ground black pepper.
