- 125 grams red Currants
- 125 grams Gooseberry
- 150 grams purple Grape
- 2 Nectarine
- 125 grams Plum
- 75 grams Pickled ginger (pickled)
- 100 grams sugar
- 0.13 l Apple juice
- 4 Tbsps lemon juice
- ½ tsp grated Lemon peel
Preparation steps

Rinse and drain the fruit. Remove the currants from the vine. Stone the nectarines and plums, then thinly slice. Halve the gooseberries and grapes. Chop the pickled ginger.

Add the sugar to a small saucepan, and caramelize lightly. Deglaze with the apple juice, lemon juice, and lemon zest. Mix all of the frui together, then gently fold in the apple syrup. Let rest for 20 minutes. Transfer to a small bowl, top with the pickled ginger, and serve.
