For the crepes
125 grams Pastry flour
1 pinch salt
2 eggs (small)
25 grams melted butter
250 milliliters milk
vegetable oil (for frying)
For the salad
1 Pineapple
1 Papaya
1 Avocado
2 Tbsps lemon juice
Red Pepperoncini
2 Tbsps Lime juice
1 pinch salt
1 pinch Nutmeg
1 pinch sugar
2 Tbsps vegetable oil
4 Tbsps Corn kernel (canned)

Preparation steps

Combine flour and salt in a bowl. Beat the eggs and stir into the flour mixture, alongwith the butter and milk. Let sit for 30 minutes.

Meanwhile quarter the pineapple, peel and cut into bite-sized pieces. Halve the papaya, remove seeds, peel and cut into pieces. Halve the avocado, remove pit, peel the halves and cut into pieces. Mix the avocado pieces with 1 tablespoon of lemon juice. Rinse the pepperoncini, slice open and remove the seeds, then finely chop. Mix together the remaining lemon juice, the lime juice, salt, nutmeg, sugar and oil. Mix fruit, avocado, peppers and corn with the dressing. Let sit.

Fry the batter in hot oil, making one crepe at a time, and serve with the salad.
