- 35 ozs Pumpkin (peeled, seeds removed and cubed)
- 2 Tbsps Oil
- 1 Tbsp butter
- 2 onions (finely chopped)
- 1 clove garlic cloves (finely chopped)
- 2 red chili peppers (seeds removed, finely chopped)
- water (if needed)
- 2 tsps Curry powder
- 1 pinch grated Nutmeg
- 3 ½ cups hot vegetable stock
- 4 Tbsps Crème fraiche (plus extra to serve)
- salt (to taste)
- peppers (to taste)
- To garnish
- chopped, red chili peppers
- torn Basil
Preparation steps

Heat the oil and butter in a large pan. Add the pumpkin, onions, garlic and chillies and cook over a very low heat for 15-20 minutes, stirring occasionally until completely soft. If it seems dry, add a little water. Stir in the curry powder and nutmeg.

Add the stock and creme fraiche and bring to a simmer. Cook gently for 5 minutes. Puree in batches in a blender or food processor until smooth.

Return to the pan and gently reheat. Season to taste with salt and pepper.

Ladle into serving bowls and garnish with swirls of creme fraiche and scatter with chopped chillies and basil.
