- 1 shallot (finely diced)
- 1 clove garlic cloves (finely diced)
- 1 red chili pepper (chopped)
- 1 tsp freshly grated ginger
- 2 Tbsps sunflower oil
- 2 cups vegetable stock
- ⅞ cup Coconut milk
- 5.333 cups Tomatoes (peeled, deseeded and diced)
- 1 ½ cups sugar Snap pea (halved on an angle)
- brown sugar
- Lime juice
- To serve
- fresh cilantro
- Sunflower seed
- Wild rice
Preparation steps
1.
Fry the shallot, garlic, chilli and ginger in hot oil. Deglaze with the vegetable stock and coconut milk. Add the tomatoes and simmer gently for around 20 minutes, stirring occasionally.

Blend the soup to a fine purée. Reduce or add extra stock as needed to achieve the desired consistency. Add the sugar snap peas and simmer for approx. 5 minutes until cooked. Season to taste with a pinch of sugar, salt and lime juice.

Spoon into bowls and serve with coriander, sunflower seeds and rice.
