1 carrot
1 stalk Celery

3 garlic cloves
1 dried chili pepper
2 Tbsps chopped parsley
3 Tbsps olive oil
400 grams brown Lentils
250 milliliters Broth
250 milliliters dry Red wine
1 Tbsp Tomato paste
8 fresh Italian sausage (available from Italian groceries, about 700 grams)

freshly ground pepper
2 Tbsps balsamic vinegar

Preparation steps

Rinse and peel carrot. Rinse and trim celery and scallions. Peel garlic. Along with the dried chile, chop vegetables very finely.

In a wide saucepan, heat 2 tablespoons oil. Add vegetables and sauté about 2 minutes. Stir in lentils, broth, wine and tomato paste. Cover and simmer, stirring occasionally and adding broth as needed, about 30 minutes. Just before the lentils are done, heat remaining oil in a skillet. Add sausages and brown on all sides. Season lentils with salt, pepper and balsamic vinegar to taste. Place sausages on lentils, cover and cook 10 minutes more.
